I have been fortunate over the years to cook many dinners and spend time with the wonderful people at Ocean Reef in Key Largo Florida. I can tell you the culinary team there is top notch and the quality of everything they do is apparent in how well the staff their is trained. Chef Philippe Reynaud has become a very good friend over the years and a few months ago we conducted our Executive Chef Search as well as Sous Chef at the Residence Club. I am delighted to Announce the Appointment of Chef Craig Rossi as the Sous Chef of the Prestigious Residence Club opening in 2021.
Chef Craig Rossi solidified his passion for the industry industry when he reached culinary school, and receiving guidance from his mentor, Chef and Owner Ron Supino of Supino’s Restaurants in Danvers, MA.
Striving for more, Chef Rossi found another passion and creative outlet in the industry – off-premise catering. He started assisting events with Creative Catering by Chef and Owner Larry Halle in Beverly, MA. However, working both at the restaurant and catering took a toll so he chose the full-time catering route where he quickly moved up the ladder as Head Chef.
In 2000 Craig was offered a position at Haverhill Country Club in Haverhill, MA. Chef Rossi began as the Head Banquet Chef in charge of the execution and business operations of all on-premise events along with training and leading a talented team.
Chef Rossi eventually applied at Ocean Reef Club in Key Largo, FL and by November 2010, he was hired as Banquet Sous Chef and has been a driving force in shaping what Ocean Reef Club is known for today. During his tenure, he has been ServSafe-certified twice, nominated for Manager of the Quarter 3 times, and developed user-friendly recipe books for the prep kitchen. He has been responsible for all food purchases for a multimillion-dollar banquet, catering, and conference service division. The best part about his job he says? The opportunity to be educated and inspired daily by his passionate team.
Until recently, Chef Rossi was the Senior Sous Chef of Ocean Reef working closely under the leadership of Chef Philippe Reynaud. Today, you can find him as the Sous Chef for the prestigious Residence Club at Ocean Reef opening in 2021 in partnership with Rosendale Collective led by Certified Master Chef Rich Rosendale.
